I have spent the past 28 Thanksgiving holidays enjoying a family meal at my in-laws home. Thankfully, it’s a joy and not a chore to gather as a family and give thanks for all of the things we are so richly blessed — just like this stuffing balls recipe!

It’s also a plus, that I have no qualms with my in-laws and love them to death! Most of those 28 years my mother-in-law has served her signature Mashed Potato Stuffing Balls. I am a big turkey fan, but if I had to skip it and only eat stuffing balls, I’d be more than happy to oblige.

Stuffing Balls are one of my favorite parts of the Thanksgiving meal. They are easy to make and taste great!

For some strange reason, a few years ago my mother-in-law wanted to try a new stuffing balls recipe and deviated from her original recipe that I could eat every week. Sorry to say the new stuffing balls recipe didn’t do a thing for me. I actually didn’t even finish the serving I took. That’s saying a lot for this carb loving gal to let stuffing go to waste at a meal.

My mother-in-law is a people pleaser, making it easy to convince her that the she must return to serving her original stuffing ball recipe. Thanks goodness! I’d probably have a melt down if I didn’t get my carb fix! I happened to get my hands on the coveted stuffing balls recipe and make my own batch. YUM! Confession, I did make a few slight modifications, nothing to ruin the taste, just a couple of healthier choices.

First you need to make bread cubes. I used 1/2 whole wheat bread and 1/2  multigrain bread. You can use any bread you choose. I have used leftover buns, rolls and white bread in the past.  You can even buy bread already in cubes, usually on the store shelves during holiday times. They tend to be pricy and are mostly just white bread. Tearing the bread is a great job for kids. Bread can be cubed ahead of time and frozen for later use. Some people use stale bread cubes, I tend to use whatever is available at the time.

Next you are going to saute your onions and celery, then pour over the bread. Add your mashed potatoes (secret ingredient), chicken broth, egg and seasonings. You will need to mix well. Grab a pair of food service gloves or very clean hands and dig in!

Form balls and place on a baking sheet. Ball size can very depending on your needs. I normally make each stuffing ball the size of a tennis ball. Bake and enjoy!

Stuffing Balls Recipe

Yield: 12

Ingredients

  • 3 Tablespoons butter
  • 1/4 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 8 cups soft white bread cubes, 1/2-inch
  • 1 teaspoon poultry seasoning
  • 1 cup prepared mashed potatoes
  • 1 egg, well beaten
  • 1/4 cup reduced sodium chicken broth

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Cube your bread
  3. Heat butter or margarine in a large skillet.
  4. Add onion and celery and sauté gently until tender.
  5. Add sauteed vegetables to bowl of bread.
  6. Add all remaining ingredients and mix well.
  7. Shape bread mixture into 12 balls.
  8. Place stuffing balls on baking sheet.
  9. Bake at 375 degrees Fahrenheit for about 20 minutes or until set.
  10. Enjoy!
