What is it with teenagers and food they can eat with their hands? I swear my son my have forgotten how to use eating utensils or maybe he’s just lazy, I don’t know. It seems if he can’t make it or heat it up in less than 2 minutes he’s not interested. I try to get him to eat less processed foods, but it doesn’t happen as often as I like. We make comprises and he will eat the Sloppy Joe Hot Pockets, I make. They have less processed ingredients than the commercial brand, so baby steps for healthier eating choices for a picky teen boy!

Sloppy Joe Pockets are a great easy supper or lunch recipe.

 As you can see our version of the Sloppy Joe Hot Pockets turn out the perfect size to fit in a teenagers hand. I am sure they would fit nicely in the hands of all kids and adults, too.

A lot of the ingredients we use to make the Sloppy Joe Hot Pockets you just may hae in your pantry. Of course you could easily adjust the ingredients to meet your families taste preferences. My son would prefer I skip the green pepper. The rest of the family likes the green pepper, so the son will have to eat them or pick them out if he must!

This specific recipe was made with lean ground beef because that was what was on sale this week at the grocery store. Ground chicken or turkey would work just fine. Planning meals and snacks around what is on sale at my local stores, helps save money on the grocery budget.
Once upon a time, I would have made homemade dough for my hot pockets. Now, my kids are older, I work full time and I take short cuts, because that is what works for my family. Refrigerated biscuits save me time and you will usually find them on our refrigerator shelf.

Sloppy Joe Pockets are an easy meal that kids can help make.

Using a fork to seal the hot pocket will ensure that most of your sloppy joe mix will stay inside the dough while it bakes. Most times my will leak a bit of sauce, but they still turn out golden brown and taste great.

Sloppy Joe Hot Pockets

Sloppy Joe Hot Pockets

Yield: 8

1 pound lean ground beef ¼ cup chopped onion ¼ cup chopped green bell pepper ½ teaspoon garlic powder 1 teaspoon prepared yellow mustard ¾ cup ketchup 3 teaspoons brown sugar Salt and black pepper to taste Shredded cheddar cheese 1 can of 8 refrigerated biscuits

Ingredients

  • 1 pound lean ground beef
  • ¼ cup chopped onion
  • ¼ cup chopped green bell pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon prepared yellow mustard
  • ¾ cup ketchup
  • 3 teaspoons brown sugar
  • Salt and black pepper to taste
  • Shredded cheddar cheese
  • 1 can of 8 refrigerated biscuits

Instructions

  1. Heat oven to 375° F.
  2. In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
  3. Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
  4. Press each biscuit into 6-inch round. Spoon 1/3 cup meat mixture and about 1 tablespoon cheese onto center of each round. Fold dough in half over filling; use a fork to seal. Place on ungreased cookie sheet.
  5. Bake 9 to 14 minutes or until golden brown.
