I don’t know about you, but I always seem to make way too much spaghetti, when cooking for my family. When you are accustomed to cooking for 5 or more people and it changes to 2 or 3 people, it can be hard to readjust your cooking techniques. Plus, when I open a 1 lb box of spaghetti, it’s just easier to cook the whole box, instead of worrying about storing the remainder of spaghetti in the box.
When I make Spaghetti Salad, I don’t follow a specific recipe. Today’s Spaghetti Salad Recipe was made completely from leftovers. How awesome is that? Technically, they weren’t leftovers, they were planned overs. I had a plan in place to use them later in the week. Last night we had Spaghetti, meatballs and salad for supper. The planned overs made this Spaghetti Salad Recipe. Simple, frugal and delicious! What more could you ask for?
This spaghetti salad recipe does have one secret ingredient, that not everyone will have in their spice cabinet, McCormick’s Salad Supreme. When I was growing up, my Dad never made Spaghetti Salad without using Salad Supreme. As a matter of fact, he used Salad Supreme in a lot of the things he cooked. The 2 I remember specifically are Spaghetti Salad and scrambled eggs. That is a great childhood memory. I don’t have too many of those.
Here’s the basic Spaghetti Salad Recipe I use. You can adjust it to suit your families tastes and preferences.
You will need to have leftover cold spaghetti, Salad Dressing, Cut up vegetables and Salad Supreme.
I use Italian or Balsamic Vinaigrette salad dressing. You could really use any dressing. We have made it with ranch and honey mustard for other occasions. I used the leftover chopped vegetables. Any vegetables you like. in bite size pieces, will be perfect.
Toss your spaghetti with dressing of your choice. Sprinkle with 1 - 2 teaspoons of Salad Supreme. Add in chopped vegetables. Add more dressing if needed. Serve cold.
Spaghetti Salad is a great side dish, meal, lunch or pot luck dish.
